Deep cooling:
Deep cooling is for storing products at 0°C or just below, to -2 to -4°C, not to be confused with rapid cooling. It is the deepest cooling in which meat, fish and sometimes also pasta can be stored without freezing. The moisture of food is always a kind of sugar or salt solution, which means that it does not freeze at 0°C but at -4 to -6°C. Deep cooling provides extra flexibility in a catering kitchen, you do not have to use a freezer and can immediately start processing the products.
